It starts with what we choose
COCOWAVE began in Singapore in 2020 with a simple desire: to make a coconut pudding we truly loved eating.
For us, flavour has always started with the ingredient itself. A good coconut needs very little introduction. It has its own fragrance, its own sweetness, its own character. The same is true of fruit at just the right ripeness, or fresh milk with its natural softness and depth.
We have never wanted to lose those qualities beneath too much else. We would rather begin with ingredients worth tasting, then work carefully enough to let them come through.
That is still how we think about food today.
Learning from the coconut
We chose Thai Nam Hom coconuts for the delicate fragrance and gentle sweetness that first drew us to them. Over the years, however, we have come to know that a name or a variety only tells part of the story.
Coconuts are wonderfully inconsistent. Their maturity changes, their flesh changes, their aroma changes. Working with them has taught us to pay attention — to recognise what is right for the pudding we want to make, and to leave aside what is not.
The pudding has evolved alongside that understanding. We have adjusted the balance, refined the texture and changed the way we handle the coconut itself. Some improvements have been almost imperceptibly small; others have added time and another step to the process. When a different way of working with the coconut flesh gave us a fuller, more natural aroma, we kept it.
Not because more work makes something better.
Because, this time, it did.
That distinction matters to us.
Keeping the flavour where it belongs
Our pudding base is made without added water or premixed powders. We do not use artificial flavouring, colouring, preservatives, non-dairy creamer or hydrogenated oils.
We do not think of this as a list of things that make COCOWAVE exceptional. It is simply a consequence of the food we want to make.
If the coconut can provide the aroma, we want the aroma to come from the coconut. If a ripe mango is naturally sweet and fragrant, we want it to taste like mango. Good ingredients already have a voice; the recipe should not drown it out.
This way of working comes with a certain amount of unpredictability. Fresh ingredients change from day to day. Their shelf life is shorter. Careful selection means that not everything we receive will make its way into the final pudding.
We are always looking for ways to work better and more efficiently. But there are some efficiencies that are not worth having if what disappears with them is flavour.
So we keep improving the process without asking the ingredients to become something they are not.
What remains after six years
Most of the decisions behind COCOWAVE are small ones. A coconut chosen or set aside. A recipe adjusted slightly. An extra step kept because it makes a difference. A flavour reconsidered because it overwhelms the coconut rather than complementing it.
By the time a pudding reaches you, none of that needs an explanation. What matters is whether it is good.
Every order carries an expectation: the pleasure of opening something you have been looking forward to and finding that it was worth choosing.
We care about that.
Six years after we began, COCOWAVE has more flavours, more formats and a great deal more experience. Yet our idea of good food has remained remarkably unchanged. We still look for natural flavour, gentle sweetness, a light and delicate texture, and ingredients that remain recognisably themselves.
There will always be another detail to refine. We hope there always is.
Because at its heart, COCOWAVE is still built on a very simple belief:
We believe good food begins with good ingredients. Our job is simply to let them taste like themselves.
